It is thought that this cheese was invented in the 17th century by a Cornish farmer called Gray. The cheese was given the name Yarg, which is the inventor's name spelled backwards. Gallybagger is an unpasteurised cheddar type that is 4-5 months old on average. We class it as a modern British hard cheese and it is made loosely to a cheddar recipe. It is pressed in modern Dutch Gouda moulds which give it its continental shape.
The 5kg cheeses age on locally sourced Lawson Cypress wooden shelves and these shelves help contribute to the moulds that you find on the rind and the subsequent flavours inside the cheese.
This is a cheese that is made all year round in small quantities of around 100kg a week. As a result, very little of it ever leaves the Island and the only places to find it are in the island’s local restaurants and delicatessens.

Borthwood will benefit from being at room temperature for the flavours to emerge fully. It is always advisable to only remove from the fridge the quantity that you think you will eat. Be careful of the runniness of Borthwood. When ripe it will spill out of the cheese. If placing back in the fridge be sure to seal the cheese properly keeping air off all of the surfaces.

Francis, was a new offering in 2012 and has come to being, as a result of a joint venture between James McCall and Lyburn cheese, when Paul Thomas was with us. Based on Stoney Cross, this is a washed rind cheese. The characteristics of Stoney Cross are retained with the eyes, the silky smooth and buttery paste, and now a very pink and sticky rind. They can either come as a 1kg, the normal size, or on request a 3kg wheel like Stoney Cross. Little Colonel being much smaller at 200gms.
This cheese achieved a Silver at the World Cheese Awards in 2011 and now has a Gold at the 2012 British Cheese Awards, and then went on to take Best New Cheese. For 2013, Francis has consolidated its position in the Washed rind market with a Gold, and then Best Semi Soft, at the British Cheese Awards 2013.

Waterloo Cheese was originally made with Guernsey milk from a herd of cows on the Duke of Wellington’s estate, hence the name. It has a white rind dappled with grey and rust coloured spores which, when opened, reveal a buttercup yellow interior, an oozing texture under the rind and a slightly firmer, curdy consistency in the centre. As the Waterloo ages, the cheese softens and runs, its texture becoming a rich, buttery, clotted cream like flavour, which is balanced, by the slightly more acidic centre.

Like Vacherin, Winslade has a runny texture when it's fully ripe so you can eat it with a spoon. The flavour is delicate - creamy and mushroomy with interesting resinous notes fom the spruce

Hedges deveolped the cheese after a discusssion with Neal's Yard Dairy, which was looking to stock a new kind of British cheese. The retailer is the only one currently selling Winslade, although it is also cropping up on restaurant menus quite a bit. I saw it at Rotunda near Kings Cross recently, where it's served hot from the oven with walnut and raisin bread for dunking.

CHEESECHEESE FRENCH -BRIE DE MEAUXKILODFCHBRIEDMEDAIRYBrie de Meaux, named after the town of Meaux, is a French cheese produced in the region of Brie, located 50 kilometers to the east of Paris. Evidence in the chronicles of Charlemagne suggests the tasting of Brie by the Emperor in the year 774. It is also said, Louis XVI last wish was a tasting of Brie cheese. In 1814, the European Tournament at Congress of Vienna, awarded Brie de Meaux the "Le Roi des Fromages" (The King of Cheeses) for its unarguable flavour and texture.
Brie de Meaux, an AOC cheese should be matured in the regions of Seine-et-Marne, Loiret, Aube, Marne, Haut-Marne, Meuse and Yonne. The difference between production and maturation places is a typical Brie tradition.
This is a raw, soft unpasteurised cow's milk cheese covered with a bloomy rind, a result of inoculation with Penicillium Candidum molds. As the cheese ages, the rind develops red or brown patches. When nearly half of the straw coloured pate is ripe and soft, it indicates Brie de Meaux is ready for consumption.

CHEESE-WEIGHTEDCHEESE FRENCH -FOURME D'AMBERT#KILODFCHFOURMEDAIRYProduced in the Auvergne region, Fourme d'Ambert (or simply Ambert) is one of France's oldest cheeses, dating back to the Roman occupation nearly 1,000 years ago. It is said that the Druids and the Gauls had developed the art of making this unique cheese. In 2002 it was separated from the Fourme de Montbrison, an identical cheese, to receive an individual AOC status.
The cheese is a traditional, farmhouse blue cheese that can be either co-operative or artisanal. Fourme d'Ambert is more supple and dense than most blues. Milk from cows grazing on either lower or higher mountain pastures is used to produce the cheese. Although, the cheese matures in 40 days, it is cave-aged for two-three months for optimum quality. During the aging time, it is injected with Vouvray moelleux, a sweet white wine. It is easily recognizable by its unusually tall cylindrical shape.

Reblochon is a soft washed-rind and smear-ripened[1] cheese traditionally made from raw cow's milk. The cow breeds best for producing the milk needed for this cheese are the Abondance, Tarentaise and the Montbéliarde. This cheese measures 14 cm (5.5 in) across and 3–4 cm (1.2–1.6 in) thick, has a soft centre with a washed rind and weighs an average of 450 grams (16 oz). As proof of its being well-aged in an airy cellar, the rind of this cheese is covered with a fine white mould. The optimal period to savour this cheese is between May and September after it has been aged six to eight weeks.[citation needed] It is also excellent from March to December.[citation needed]

Vacherin is made from pasteurised cow’s milk, which offers a full-flavoured and slightly acidic taste. Cheese becomes almost liquid after maturation. It has a greyish-yellow blanched rind which has to be removed before eating it. This rare and luxury cheese is eaten like a Fondue. Vacherin is produced only from 15th August to 31st March. The cheese tastes delicious with wines such as Beaujolais Nouveau, Côtes du Jura and Champagne. It comes in various shapes enclosed with a strip of spruce bark.
